Casserole roasting is an easy meal….

There are a wide variety of cast iron dutch ovens on the market so do your homework and purchase one that is within your budget and start roasting.  I have several cast iron dutch ovens and use them weekly to make stews, pot roast and a recipes from Master it on how to roast a whole chicken in less than ninety minutes depending on the size of your chicken.

Add your chopped tarragon and some salt to the breast then  place the leftover tarragon stems inside the cavity 


Nothing too hard yet…right?


Cover the chicken with parchment paper and the dutch oven lid and bake for 60-90 minutes


The time for roasting depends on the size of the chicken and how long you browned in the beginning.  If you do not have parchment paper this roasting process still works well.
